この文の should は「感情・判断を表す語句とともに使われる should」などと呼ばれます。should を使わず単に現在形を用いた場合、「今腹を立てている」状況に驚いているだけです。ですがキーセンテンスは「君が腹を立てることになるなんて」―その状況に至るプロセスまでが含まれているのです。
