Keith: Can’t complain. Actually, I’ve just started my own real estate company.
Marilyn: That sounds great, but very challenging.
Keith: Yes, it’s not easy, but I relish such a challenge.
Marilyn: Was it tough to persuade your wife?
Keith: Well, she was naturally nervous, but I insisted that it was the right thing to do.
Marilyn: So now she supports you.
Keith: Absolutely.

I insisted that it was the right thing to do.
insist のイメージは「ここから出ないよ」。この動詞は「in（＝upon）＋sist（立つ）：上に立って動かない」という語源を持っているのです。「自分の考えは変えないよ」といった頑固な強い主張がこの単語の持ち味なのです。
claim も「主張する」と訳されますが、そのイメージは「叫ぶ」。「私は正しい、私には手に入れる権利がある」と叫んでいる感触。
She claimed that she was innocent.

insistの後にくるthat節は動詞が原形になると習ったのですが、今回これには当てはまらないのでしょうか？
命令・要求・提案・決定を意味する動詞のthat節は、should+動詞の原形になります。
これは、命令や要求などはまだ実現していないことのため、「仮定法現在」になるからです。
しかしこの例文は自分が主張した、ですから「仮定法現在」には該当しない、と理解しましたが･･･
